Mama Jen’s Healthy Braised Chicken with Tofu & Carrots under 25 minutes

It is so good, I am writing while eating the dish that I am about to write about. It is so easy and hearty.

I learned how to make this dish a few years ago when I was living in California. That year my mom came to visit and had a cooking class for me, the theme of the class centered around ‘quick, easy, and healthy’. We made a huge batch of chicken, the next day she shredded the chicken and threw it in a tortilla and veggies made it into a wrap! This is a versatile delicious dish that will make you want to have more.

PS great dish to eat with noodles and rice (cauliflower, brown, white)

Ingredients
  • 3 chicken thigh or drumpstick
  • 1 large carrot cut in Batonnet cut
  • 2 pieces of tofu in Batonnet cut
  • 5 garlic clove
  • 1×2 inch of ginger in batonnet cut
  • 2-3 tbsp of soy sauce
  • 1 tbsp of honey
  • Salt & generous amount of black pepper to taste
  • Cilantro for topping
  • 2 tbsp of cooking oil
  • 2 big star anise
  • 1 shallot cut in half

How to make this finger licking braised dish:

  1. Wash and cut the vegetables, take the chicken out from fridge let it sit for 10-15 minutes before cooking
  2. Put the cooking oil in a hot pan, put the garlic, shallot, and ginger into the pain let it cook until it is turning golden
  3. Now put the chicken in (skin side first), along with carrots. Let it cook until the chicken skin turn golden then turn over
  4. Once you turn the chicken over, add in tofu, and water. Make sure the water covers the top of the chicken, carrots, and tofu.
  5. Add star anise, black pepper, honey and soy sauce into the liquid. Turn the heat up to high, once it boils then turn it down to low and put a lid on the pot. Cook for 10 minutes
  6. Once 10 minutes is up, there should be still some liquid, turn up the heat to medium/high. Let the liquid sizzle down to a thicker sauce it is ready to be served
  7. Top with cilantro
