Garlic Basil Baked Potato Wedges Recipe

I think this dish should be dedicated to my dear friend Jakub, who loves everything potato and garlic. This man can compete with people from Shandong (aka my mom’s family home province) where garlic is produced and we eat it raw (1 garlic clove with 1 dumpling). I know you are probably wondering his poor colleagues have to smell this stinky czech, well lucky Jakub everyone in Cambodia loves raw garlic also. So he wasn’t the only one that stank.
Around 3 years ago, we met in Cambodia at the airport. I was notify this long-term bookman (what we called those that sold books door-to-door with Southwestern) is coming in town for the next 2 years. I was in charge of picking him up at the airport (this is a week into my stay in Cambodia). That day I showed up at the airport, once I got there is when I realize I have no idea what this guy name Jakub look like. All I know he is a white male from Czech, I should have looked him up on facebook before I left the apartment. At the time my phone hasn’t been unlock and the airport didn’t have free wifi. I though to myself ‘Great this will be awkward’
So as I waited at the arrival, every 2o something white male that walk by I whisper ‘Jakub’ at them hoping for a response. If they look at me without a warm welcome/excitement, I looked away immediately pretended nothing happened. The worst of all I was pronouncing his name wrong as ‘Jacob’. I blame all of this on jet lagged, but probably because the 24 year old me didn’t have my shit together. Finally this skinny white male out of the door and made eye contact with me. ‘Jacob?’ and he said ‘Jenny?’ Thank god he looked me up, would have been easy to miss me in a crowd of Asian.
Anyways, Jakub is extremely athletic and I am not. He always try to get me out and about with him to exercise, the few times I have gone out with him I couldn’t walk for at least 2 days after. Usually if he isn’t at the office, he is most likely on the wall or on the rock somewhere climbing.
Since he loves potato and garlic, this is the perfect dish for him. Jackb: Quick and easy, great dish for a date night to stink up your date. Perfect dish to qualify if she is gf worthy, by seeing if she is willing to stink up others with you

Serving size: 2 Cook time 30 minutes
Ingredient for Garlic Basil Baked Potato Wedges
- 2 medium potato
- 1/2 tbsp of garlic paste
- 1/2 tbsp of basil
- 2-3 tbsp of olive oil
- salt and pepper to taste
Directions for this crispy Garlic Basil Baked Potato Wedges
- Preheat the oven to 375 F
- Wash and cut the potato into wedges. After cut tossed in 2 tbsp of olive oil (make sure each side is evenly covered)
- Put in oven on a baking pan, let it bake each side 13-15 minutes. Total of 30 minutes
- While the potato is baking, mix the garlic paste, basil paste, salt, and olive oil in a bowl
- Once the potato is finished baking, toss the potato wedges in the mixture. Top with black pepper
Perfect baked salmon as a main dish to pair with this crispy potato or a healthy fresh salad!
