Off the Hook Easy Kafta Meatballs

Kofta reminds me of my trip with my best friend to the Balkin. We ate a lot of meat, potatoes, and seafood.
Kofta is a dish that is found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine. Each region has a slightly different mix and how they eat it. For example: koftas in India/Pakistan are served in a spicy curry/gravy and are eaten with spiced rice (rice with cumin). Where as in Middle East, it is served with spiced gravy or in kebab form (often in a cylinder shape).
This is a perfect dish for summer BBQ dish and with the leftover you can take it to-go in a pita wrap

Serving size 4 Prep & Cook Time: 40 minutes
Ingredients for these magic meatballs:
- .5 kg of ground turkey (1 package 1.1 lb, you can use any of the preferred meat you have)
- 3 finely minced garlic cloves
- 1 tea spoon of all spice
- ½ tsp of cayenne pepper
- ½ tsp of paprika
- 1 – 1.5 cup of minced cilantro
- 1 tsp of cumin seeds
- 1 egg
- Pepper and salt
- 1-2 tsp of corn starch
- 2-3 tsp of oil
- Optional: I threw in 2 tsp of Ghee and 1-2 tsp of cooking oil for more juicy taste since turkey is a little dry
Let’s make the magic:
- Preheat the oven to 400 degrees. Lightly spray cooking pan with nonstick cooking spray
- Chop the garlic and cilantro
- Put the ground turkey (or preferred meat) in a mixing bowl
- Put cayenne pepper, paprika, all spice, cumin seeds, garlic, and cilantro into the mixing bowl with the ground turkey
- Once it is mix well, add the 1 egg and mix until the texture feels more dry
- Let the meat sit for 10-20 minutes to soak up the flavor
- Add 1-2 corn starch, and mix well (this will allow the meatball stick together)
- Lastly add salt & pepper, and oil. Mix again
- Before cooking, I usually like to test the flavor with a small bite of turkey put over the hot sizzing pan just to make sure it taste to my liking.
- Now make them into smaller than a golfball size and put on baking pan (you can freeze it to keep for later). Put in oven and bake for 25 minutes!
Now once it’s finished you can put it in a pita wrap with the vegetables you prefer and top with a Tahini dressing or just eat it by itself!
