Jen’s Slurpy Spicy Stir Fry Noodles Under 20 Minute

Growing up this was one of the ways my mom would sneak vegetables into my brother’s carnivorous diet; by chopping the veggies thinly and mix it with something he likes in this case noodles. As for me, I love all sorts of noodles.
As I got older, It became my ‘clean out the fridge‘ food, meaning stir fry the noodles with whatever vegetables that are left in the fridge. Hope you enjoy~
Serving Size: 2- 2.5 Total Prep & Cooking Time: 20- 25 minutes
Ingredients to make Chinese Noodles:
- 2 diced Garlic
- 1/3 cup of thinly julienne cut carrot (1/2 carrot)
- 1/2 of thinly sliced yellow onion
- 1/2 cup of thinly sliced Mushroom (I used Shiitake Mushrooms today)
- 2-3 thinly sliced bokchoy (on the long-side, julienne cut)
- 2 tea spoon of cooking oil
- Optional: left-over steak (1 cup), can be replace with other preferable meat or even scrambled egg
- 2 packages Udon noodles (found at asian grocery stores, any brand is fine) If you can’t find udon noodles, any kind of noodle is okay 🙂**PS if you are not in the mood to chop veggies, buy frozen veggies and use those**
Magic Sauce to make the noodles real slurpy:
- 2-3 table spoonSoy sauce (Any brand is fine, I buy Kikkoman)
- Preference: if you want a little savory add 1 tea spoon of brown sugar
- Salt & pepper to taste
- 1 small drip of sesame oil
- Optional: Jen’s spicy hot oil (Ingredient: cooking oil and red pepper flakes)
Optional Visual Touch:
- minced cilantro or green onion
- Sprinkle of Shichimi Togarashi (yes it’s spicy)
How to Make this Naughty Noodle Dish
- Defrost the noodles in a bowl
- Chop the vegetables
- Heat up the leftover meat
- PS if you are not in the mood to chop veggies, buy frozen veggies and use those
- Mix the sauce (without Sesame oil & Jen’s spicy hot oil)
- For Jen’s spicy hot oil: put 1/3 cup of vegetable oil in a bowl, microwave for 3-4 minutes until sizzling hot. Throw 1/4 cup of hot pepper flakes (it should sizzle and smell delicious)
- Drizzle preferred oil in pan. Put garlic, onion, and carrots in the oil. Let it cook until browned, once cooked take it out out and put in a bowl
- Cook the mushroom and bokchoy in the same pan until it’s fully cooked and put in the same bowl as the garlic, onion, carrot
- Put the defrosted noodles in the pan, mix the veggies, and the meat. Mix throughly while let the noodles heat up
- Pour the sauce in, and mix throughly. Add salt, pepper, sesame oil, & Jen’s spicy hot oil to your taste
- Put the noodles in a serving bowl, sprinkle cilantro/green onion for visual orgasm and if you like some heat put Shichimi Togarashi powder or more Jen’s spicy hot oil
